Sweet and Sour Pork for 2 (Easy)

Such a colorful meal!

 This is such a quick and easy recipe to prepare when you are in a crunch for time and you have all that you need to make it a meal represented. I double this recipe for my family, which is 4 people. Cook some rice in the rice cooker, serve over cooked rice, sprinkle a couple dashes of soy sauce on top for more flavor and enjoy!


2 1/2 tbsp. sugar
3/4 tsp. salt
2 1/2 tbsp. vinegar
1 1/4 cups water
1 1/2 tbsp. cornstarch
1 package of thin boneless pork chops cut into strips
1 tsp. soy sauce
1 small carrot, peeled and cut into rounds
1/2 green pepper, cut into strips
1 tomato cut into eighths
1 can sliced pineapple, cut into cubes
1/2 cucumber sliced
Hot cooked rice, at least 2 cups worth

1. Fry/saute' the cut up pork in some olive oil, drain grease and set aside.
2. In same fry pan, combine sugar, salt, vinegar, and 1 cup of water and heat to a boil.
3. Stir in cornstarch mixed with the remaining 1/4 cup of water and cook until thickened.
4. Add cooked pork and simmer 5 minutes.
5. Add soy sauce, carrot, green pepper, tomato, pineapple and cucumber. Continue cooking 3-4 minutes or until vegetables are heated through.
6. Serve over hot cooked rice and I drizzle a little more soy sauce over my meal to add more flavor.
