Crispy Honey Lime Tilapia (Easy)

I am always up for a good tilapia recipe that is quick, easy, and tasty. This is definitely one of them. Tilapia is such a thin fillet of fish that it doesn't take very long to cook thoroughly either. The honey drizzled over the fillet is what makes this dish taste so good, that and the lime zest. I served this meal with Coconut Ginger Jasmine Rice http://tastytalkwithamy.blogspot.com/2011/08/coconut-ginger-jasmine-rice-easy.html and sliced carrots with butter and brown sugar.

Ingredients

  • 4 whole Tilapia Fillets
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Honey
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Lime Zest
  • 2 cloves Garlic, Crushed
  • ⅓ cups Flour, Seasoned With Salt, Pepper, And Lime Zest
  • 2 Tablespoons Olive Oil (for Frying)
  • Honey And Lime Zest, For Additional Drizzles

Directions:
  1. 60 minutes before cooking, season tilapia fillets with salt and pepper then lay in a baking dish or into a large Ziploc bag.
  2. In a bowl, combine olive oil, honey, lime juice and zest, and crushed garlic and whisk until combined. Pour over tilapia and let marinate for an hour. (I chose to marinate in a large baking dish because tilapia is fragile and can tear apart easily, pictured down below)
  3. Add flour (plus a bit more salt, pepper, and lime zest) to a shallow bowl and set aside.
  4. Heat a cast iron skillet (or a non-stick skillet) over medium-high heat and add olive oil.
  5. Dredge each piece of tilapia through the flour until you have a very light coating. Making sure the pan is hot, add tilapia to the oil and cook until flaky and crispy on each side, about 3-4 minutes per side.
  6. Remove tilapia from pan and let drain on a paper towel for a few minutes. Serve with an additional drizzle of lime zest and honey.

Makes 4 tilapia fillets.
