Spinach Carbonara Pizza (Easy)

This pizza is delicious and filling! It is not a difficult pizza to make either. It took me at most 30-45 minutes to prepare and bake. Carbonara is a sauce that contains bacon and cheese which sounds pretty good to me!

Yields: 4 servings


INGREDIENTS:
  • 1 package refrigerated pizza crust
  • 12 oz pack of bacon
  • 1 6-8 oz package of fresh spinach leaves (about 8 cups)
  • 1-2 tsp minced garlic
  • 1/4 cup grated Parmesan cheese
  • 1 jar 16oz Alfredo sauce
  • 1/2 tsp black pepper
  • 2 cups (8oz) shredded mozzarella cheese

DIRECTIONS:
  1. Preheat oven to 450 degrees. Unroll dough over a lightly greased rectangular shaped pan. Bake 10 minutes in oven, crust will lightly brown. Remove from oven and set aside.
  2. Meanwhile, fry bacon in frying pan until crispy. Drain on paper towels. Let cool.
  3. In a large glass bowl, line with about 3-4 paper towels; this will be for absorbing the moisture from the fresh spinach. Pour the fresh spinach leaves on top of the paper towels in the bowl and place in microwave for 3 minutes to wilt the spinach leaves. Set aside.
  4. If you have a food processor put your cooked bacon in and pulse it until completely crumbled. If you have a hand-held food chopper, then chop up your bacon into small bits. If you have neither then try and crumble with your bare hands and/or possibly a knife. Set aside.
  5. In a separate bowl; pour the jar of Alfredo sauce, add 1/4-1/2 tsp of black pepper, the 2 teaspoons of minced garlic, and half of the crumbled bacon; stir. Spread this mixture over the partially baked pizza crust.
  6. Add your toppings in this order: shredded mozzarella cheese, wilted spinach leaves, the rest of the crumbled bacon, grated Parmesan cheese, and if you like you can sprinkle some more black pepper on top.
  7. Place pizza in the 450 degree oven for 10, possibly 12 minutes longer. Enjoy!

12 oz of bacon pulsed into the equivalent of 1 cup crumbled.
Alfredo sauce with garlic, black pepper, and half of the crumbled bacon, ready for spreading.
Baked and ready for consumption!
