Hot Fudge Cake for the Crock Pot (Easy)

A pure chocolate explosion in the mouth!  I don't know what else to say!  The first bite for the first time is such a treat!  It is so easy to make and I had all the ingredients already on hand in my home.  The recipe says to slow cook for 4 1/2 hours, I think that is too long, it burned on the edges somewhat, 3 to 3 1/2 hours is sufficient and I think it depends on the crock pot.  You pour this recipe into the cooking sprayed crock pot in 3 layers, first the cake batter layer, then the semi-sweet chocolate chips on top of that and then the brown sugar/cocoa powder mixture mixed with boiling water.  Now when you do the last mixture which is watery, be sure to hold a spoon underneath the flow so you do not create a hole in the cake, by that I mean it allows the liquid mixture to disperse all over the top instead of in one spot making a hole. Serves 8

Ho Ingredients
  • 1-3/4 cups packed brown sugar, divided
  • 1 cup all-purpose flour
  • 6 tablespoons baking cocoa, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 2% milk
  • 2 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract (I used 1 tsp)
  • 1-1/2 cups semisweet chocolate chips
  • 1-3/4 cups boiling water
  • Vanilla ice cream

Directions

  • In a small bowl, combine 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt. In another bowl, combine the milk, butter and vanilla; stir into dry ingredients just until combined. Spread evenly into a 3-qt. slow cooker coated with cooking spray. Sprinkle with chocolate chips.
  • In another small bowl, combine the remaining brown sugar and cocoa; stir in boiling water. Pour over batter (do not stir). Cover and cook on high for 4 to 4-1/2(I think this is too long, if it is burning on the edges before the 4 hours of cooking then turn it off) hours or until a toothpick inserted near the center of the cake comes out clean. Serve warm with ice cream.
