Spicy Pistachios (Easy)

Be sure to suck on each pistachio to savor the flavor!


My husband makes these for work to snack on instead of junk food. So easy to make. He liked having flavored pistachios and you pay extra for those in the grocery store so I told him to use a recipe from Emeril Lagasse called Emeril's Essence to season them and then you get a Cajun twist to your nut. Pistachios are so good for you, 1/2 cup equals 6 grams protein, 310 mg potassium, no cholesterol, and 3 grams of fiber. They are also full of the good fats and satisfy hunger in between meals.  Recipe follows:

  • 2-16 0z bags pistachios, if you can find unsalted then get those but most of the time you will only find salted
  • 3 Tbsp. Emeril's Essence (recipe below)
  • 1/3 cup olive oil
  • One gallon ziploc bag for shaking and storing pistachios in
Pour the contents of both bags of pistachios into gallon ziploc, pour your olive oil all over the pistachios, then add the measured out spices and knead the bag until all the pistachios are coated. I can't say how long it lasts in the bag because it is always devoured in 2 weeks time.

    Emeril's Original Essence:

    ·  2 1/2 tbsp. sweet paprika
    ·  1 tbsp. salt
    ·  2 tbsp. garlic powder
    ·  1 tbsp. black pepper
    ·  1 tbsp. onion powder
    ·  1 tbsp. Cayenne
    ·  1 tbsp. dried oregano
    ·  1 tbsp. dried thyme 

    Mix all of the ingredients together and store in an airtight container. Can be stored for up to 3 months. Note: this recipe makes about 3/4 cup. (I store these spices in an empty Parmesan cheese shaker container)
