Cajun Roast Beef Po-Boy (Easy)



I have just a few sandwiches that I consider to be awesome, the Po-Boy and the Reuben. You are probably asking yourself what is a Po-Boy? What makes a Po-Boy special is the bread. A Po-Boy isn't a Po-Boy unless it's made with good quality, fresh French bread. Now I have to say I love Walmart's bakery fresh French bread and that is my bread of choice, if you can get it when they just pull it out of the oven, that is the best! I had my first bite of this yummy Cajun Roast Beef Po-Boy Sandwich when I was a teenager living in New Orleans, my sister introduced me to it, she was working there. I got mine at the neighborhood A&P, they had awesome fresh French bread as well. There are other versions of the Po-Boy, like fried shrimp and fried crawfish, both are just as delish and equally awesome! I would almost have to say the Fried Shrimp Po-Boy is the best of them all. If you ever go to New Orleans I highly suggest getting a Po-Boy sandwich.

When I used to live back in New Mexico, we, my family and me, used to love going to the Jemez mountains and hiking and we would take these sandwiches along with us. They are a happy memory sandwich! When we lived back in Washington State and would go hiking in the Olympic mountains we would also pack up these sandwiches for the trip, anytime we would take a trip for the day, these were the sandwiches of choice for my family, filling and yummy!




INGREDIENTS:

Fresh French bread
A few thick slices of Cajun Roast Beef, not plain, Cajun
A slice of Pepperjack cheese
Romaine lettuce leaves
sliced tomatoes
Mayo
                                                                              
DIRECTIONS:
Slice about a 6 inch piece of French bread, spread some mayo on, add your Cajun Roast Beef, a slice of Pepperjack cheese, top with your tomato slices, and Romaine lettuce. Eat and Enjoy!
