Holiday Chicken Salad (Easy)


I do like a good chicken salad and I am always on the lookout for a new recipe to try. I came across this one a good while back ago and I have been making it ever since the first time I tried it. What I love about this is you can prepare it ahead of time and it is ready to be eaten anytime you like, you can eat it as soon as you have prepared it or put it in the fridge to let it chill and eat it later. It is great to take to work for lunch as well.

Ingredients

  • 4 cups cubed, cooked chicken meat (I use one package of boneless, skinless chicken breasts, approximately 3 breasts in a package, sometimes 4 but then all 4 are small. I also boil them in a pot of water, enough to cover them completely and cook until white in center of each breast.)
  • 1 cup mayonnaise
  • 1 teaspoon paprika
  • 1 1/2 cups dried cranberries (1 1/2 cups is the entire 6 oz bag of dried cranberries)
  • 1 cup chopped celery
  • 2 green onions, chopped
  • 1/2 cup minced green bell pepper
  • 1 cup chopped pecans
  • 1 teaspoon seasoning salt
  • ground black pepper to taste
  • 1 cup red grapes, halved

Directions:

In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.

I use a large mixing bowl to put all my ingredients in. I first boil my chicken breasts whole, let them cool to the touch, then cut them up into bite-size cubes and then add the rest of the other ingredients.
