This is a quick meal to prepare and only takes 30 minutes to bake in the oven. Basically all you are doing is cutting up your chicken into bite-sized chunks or strips, whichever you prefer and placing them in the dish with the already prepared sauce. I use a rice cooker to cook my rice, love it! I could not imagine not having one. I am on my 2nd rice cooker in 19 years and it also serves as a vegetable steamer. This recipe calls for 1/2 tsp of cayenne pepper, you can reduce it to 1/4 if you don't like spicy or leave it out altogether. I advise try some in the recipe before you leave it out totally.
INGREDIENTS:
- 6 tbsp olive oil
- 6 tbsp soy sauce
- 6 tbsp honey
- 3 tbsp white vinegar
- 1 1/2 tsp thyme
- 1 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp allspice
- 1 tsp black pepper
- 3-4 boneless, skinless chicken breasts
- 2-3 cups hot cooked white rice
DIRECTIONS:
- Preheat oven to 375 degrees. Combine oil, soy sauce, honey, vinegar, thyme, paprika, cayenne pepper, allspice, and black pepper in a shallow, somewhat small, baking dish; mix well.
- Cut up chicken breasts into bite-sized pieces and then place in the baking dish with the sauce. Stir the chicken to coat with sauce.
- Bake chicken for 30 minutes.
- Spoon some rice onto a plate, put some chicken on the rice, then drizzle some of the sauce over the rice and chicken.
